Mediterranean salad

Ingredients

Dressing 

1/2 Chopped fresh parsley 

Juice of 1 medium lemon 

1/4 cup olive brine  

salt & pepper 

1/2 tsp cayenne pepper (optional)

1 cup of hummus

Salad

1 bag of mixed lettuce of spinach

1 packet of Yumi herb falafel

1 packet of BioCheese Feta cheese

2 whole tomatoes chopped 

1 medium cucumber thinly sliced

1/2 cup olives sliced 

Optional

Add pasta to make pasta salad

Or serve with pita bread

Plant based pizza

Ingredients

1 cup chopped pumpkin 

1/2 cup chopped capsicum

1/2 cup chopped zucchini

1/2 cup sliced mushrooms

1/2 sundried tomatoes chopped

1/2 clove garlic minced

1/2 red chilli (optional) chopped

1 cup spinach

1/2 packet of BIioCheese pizza shred

1/4 cup tomato paste

1 pizza base

 

Method

Preheat oven to fan forced at 200 degrees celsius 

Spread the pumpkin, capsicum and zucchini evenly on a tray and add salt and pepper. cook until soft

Spread tomato paste, chilly, and garlic on the pizza base then add the rest of the ingredients. Put the pizza in the oven until cheese has melted. 

Plant based nachos

Ingredients

1/3 bag of corn chips

1/3 bag of BioCheese cheddar shred 

1/2 tomato

1/2 avocado

1 sliced jalapeno 

1/2 jar of salsa

1/2 brown onion 

1 clove garlic

1/2 can black beans 

1 packet of taco seasoning


Method

heat a pan on medium with a drizzle of olive oil

Add onion, garlic and taco seasoning until brown

add black beans and simmer for 15 minutes

heat chips, cheese and salsa in the microwave or oven at 180 degrees Celsius on air fry

chop up avocado and tomato 

take chips out of oven or microwave, add the beans and vegetables
